PEX or CPVC
Both are standard and both are fine. PEX is flexible, so it needs fewer joints and offers fewer places to leak. It also routes with less demolition. CPVC is rigid and solvent-welded, and some plumbers simply prefer it. The choice matters less than the routing quality and the number of concealed joints.
Why access is the real cost of a whole home repipe
The pipe itself is cheap. A repipe still needs a permit and inspection under the Florida Building Code. What you pay for is opening walls and ceilings to route it, then repairing and repainting all of it. So a repipe during a renovation costs a fraction of one done alone. That is why it is worth doing alongside anything else that opens the house.
What to expect
Expect the water off for parts of it. Expect holes in walls and ceilings before any visible improvement. Then comes drywall, texture and paint. It is disruptive in the middle and invisible when finished. That is an odd thing to spend money on, and a very good thing to have done.
